Ingredients: Makes: 12
- 2 sheets of puff pastry
- Apple sauce
- Flavoured jam of preference
- 1 Banana, sliced
- 3 strawberries sliced thinly
- Blueberries
- Icing sugar for dusting
- Candy eyeball decorations
- 1 egg
- 1 tbsp milk
Method:
- Preheat oven to 180ºC.
- Allow pastry to defrost slightly. Cut each pastry sheet in ½, setting aside one section for cutting up into strips.
- With the remaining pastry sections, cut each into 4 rectangles (i.e you should have 12 rectangles from 1 ½ pastry sheets).
- Spread a tsp of either jam or apple sauce onto each rectangle. Top with desired fruit.
- Using the leftover pastry section, cut thin strips and arrange on top of the rectangles to resemble bandages. Ensure you leave a gap to place the candy eye decorations.
- Secure each bandage by pressing with the back of a fork and trim the excess edges to give clean lines.
- Whisk together egg & milk and lightly brush pastries with a pastry brush.
- Bake in oven for 20-25 minutes until puffed & golden.
- Dust each pastry with icing sugar and place the eye candies to finish your spooky mummy fruit pastries!
Notes:
- Experiment with other type of fruit and fillings.
- Can use Nutella or peanut butter if not taking to school.
- If pastry become too soft to work with, place back in the freezer for 5 minutes.
- Do not overtop the pastries with fruit to avoid pastry becoming unstuck when baked.
- Make sure to firmly secure your bandages by squishing with the back of a fork.
