Ingredients: Makes: 12

1 cup plain flour

1 cup wholemeal flour

1 ¼ tbsp baking powder

3/4 cup milk

2 eggs

1/3 cup brown sugar

1 banana
-
1/3 avocado
-
2 cups spinach
-
¾ cup chocolate chips
-
50g butter, softened

Googly eyes candy for decoration
Method:
- Preheat oven to 160ºC fan forced and grease a 12-container cupcake tray or line with patty cases.
- Blend together banana, spinach, avocado and milk until pureed and smooth to make your green mixture.
- In a large mixing bowl sift together flours and baking powder.
- Add brown sugar, butter, eggs and green mixture to the flour and stir until comes together.
- Stir in chocolate chips, reserving some for later.
- Scoop tablespoons of mixture into prepared cupcake tray to about ¾ full. Sprinkle remaining chocolate chips on top.
- Bake in a hot oven for 25 minutes or until a skewer comes out clean from middle. Top with googly eyes & enjoy!
