Chocolate Monster Muffins

Ingredients: Makes: 12 

  • 1 cup plain flour 

  • 1 cup wholemeal flour 

  • 1 ¼ tbsp baking powder 

  • 3/4 cup milk 

  • 2 eggs 

  • 1/3 cup brown sugar 

  • 1 banana 

  • 1/3 avocado 

  • 2 cups spinach 

  • ¾ cup chocolate chips 

  • 50g butter, softened 

  • Googly eyes candy for decoration 

 

Method: 

  1. Preheat oven to 160ºC fan forced and grease a 12-container cupcake tray or line with patty cases. 
  2. Blend together banana, spinach, avocado and milk until pureed and smooth to make your green mixture. 
  3. In a large mixing bowl sift together flours and baking powder. 
  4. Add brown sugar, butter, eggs and green mixture to the flour and stir until comes together. 
  5. Stir in chocolate chips, reserving some for later. 
  6. Scoop tablespoons of mixture into prepared cupcake tray to about ¾ full. Sprinkle remaining chocolate chips on top. 
  7. Bake in a hot oven for 25 minutes or until a skewer comes out clean from middle. Top with googly eyes & enjoy!
