Easy Sushi Rolls
Looking for a fresh, fun alternative to sandwiches in the lunchbox? Making your own sushi is a game-changer! This DIY sushi recipe is perfect for both kids and grown-ups, offering endless opportunities to get creative with your favorite fillings. Think capsicum, carrot, lettuce, crumbed chicken, prawns—whatever your kids love! It’s a great make-ahead option for school lunches or class party platters, keeping everyone excited for mealtime.

Ingredients: Makes approx. 6 medium rolls or 24 individual pieces
- 3 x nori seaweed sheets
- 1 cup sushi rice cooked to directions
- 2 tbsp sushi seasoning or rice wine vinegar
- Bamboo sushi mat
Filling Ideas:

Sliced avocado, red onion and shredded chicken breast

Cucumber and tuna (combine: 1 small can corn, 1 can sandwich style tuna drained, 1 tbsp mayonnaise)
Methods:
- Cook sushi rice to directions either in rice cooker (1 cup rice: 1 ¼ cup water) or on stove and allow to cool. Spoon over sushi seasoning and stir.
- Using the bamboo mat, place 1 sheet of nori (shiny side face down) and top with flat layer of rice leaving 2cm gap at the top.
- Place desired fillings in a line at the bottom of the nori sheet on top of rice and using bamboo mat, roll into a tight wrap. Use a small amount of water at end to seal.
- Slice into halves or single pieces and repeat with remaining sheets. Keep refrigerated until ready to serve and enjoy with soy sauce
