Veggie & Hummus Wholegrain Rolls

We've taken our much loved hummus and boosted it with extra roasted veggies to take your rolls up a notch in taste and nutrition. Packed with fibre, protein, non haem iron and heart healthy fats, this recipe is tasty and nutritious.

Ingredients:

  • 1 x small zucchini, halved & scored
  • 1 x red capsicum chopped
  • Olive oil
  • Hummus
  • Salt & pepper
  • Red onion sliced
  • Cream cheese
  • Spinach leaves
  • Multigrain bread roll


Method:

  1. To make veggie hummus, place zucchini and capsicum on baking tray. Drizzle with olive oil and roast in hot oven for 30 minutes at 180 degrees.
  2. Remove veg from oven and allow to cool. Chop into smaller chunks and place in food processor. Add 2 tbsp of olive oil and generously season with salt and pepper and blitz until smooth consistency.
  3. Add ½ cup of veggie mixture and ½ cup of hummus and mix to combine to make veggie hummus.
  4. To make roll, assemble hummus, spinach leaves, avocado, red onion and spread of cream cheese on a multigrain roll.


Notes:

  • Veggie hummus can be used to dip with crackers or carrot sticks and stored refrigerated in airtight container.
  • Introduce veggies in different textures and forms for your kids
