Hot Cross Bun Bliss Balls

Looking to add a little Easter fun to the lunchbox—without tossing in yet another chocolate egg? These Hot Cross Bun Bliss Balls strike the perfect balance: sweet and festive, but packed with nourishing ingredients like oats, chia seeds, and dates. We’ve snuck in a few marshmallows for a fun surprise, but the real magic is how energising (and lunchbox-friendly) they are.

They're perfect for making with kids (just keep damp hands nearby!), and a great option for class parties or after-school snacks. Want to mix it up? Try adding dried fruit, choc chips, or chopped nuts (if you're not sending them to school). For a wholesome twist, swap out icing for melted dark chocolate.

Ingredients:  Makes approx. 10-12 balls

  • 1/3 cup dates soaked in warm water
  • ¼ cup desiccated coconut
  • ½ cup rolled oats
  • ½ cup marshmallows chopped
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • 1 tbsp cocoa powder
  • ½ cup rice bubbles
  • 3 tbsp icing sugar mixture
  • 1 tbsp milk

Method:

  1. In a food processor, blend the soaked dates, coconut, rolled oats, marshmallows, chia seeds,
  2. cinnamon and cocoa powder until well combined. Add extra warm water if mixture doesn’t come together.
  3. Remove blade of the food processor and stir in the rice bubbles.
  4. Using damp hands roll spoonfuls of mixture into balls and refrigerate until firm.
  5. Whisk together icing mixture & milk and using a sandwich bag for a piping bag, pipe crosses over the top of the balls. Refrigerate until icing is set & enjoy!
