Apple Muesli Cookies

Everyone loves a cookie, but when it's going in the lunchbox, I like it to have a little more nutrition. These apple and muesli cookies deliver plenty of fiber from a hearty muesli base, while in-season apples add natural sweetness and a boost of vitamin C. They’re a great autumn bake—full of flavour, perfect for lunchboxes, and a fun one to make with the kids.

Ingredients:  Makes approx. 20 cookies

  • 115g butter softened

  • ¾ cup brown sugar

  • 1 tsp Vanilla essence

  • 1 egg

  • ½ cup wholemeal flour

  • ½ cup plain flour

  • ½ tsp Cinnamon

  • ½ tsp Nutmeg

  •  1 ½ cup muesli any variety (nut free if sending to school)

  • ½ Apple grated or finely cubed

Optional:

  •  ¼ cup pepitas or other seeds

Method:

  1.  Preheat oven to 180 degrees Celsius and line a baking tray.
  2. In a large bowl, with an electric mixer, cream butter and brown sugar until light and fluffy then add in egg and vanilla  and continue beating until combined.
  3. Stir into mixture flours, cinnamon, nutmeg, muesli, apple and seeds.
  4. Using damp hands, roll tablespoons full of batter into slightly flattened balls onto tray. Allow room for spreading
  5. Bake for 12-15 minutes for until golden brown and allow to cool before eating!
