Apple Muesli Cookies
Everyone loves a cookie, but when it's going in the lunchbox, I like it to have a little more nutrition. These apple and muesli cookies deliver plenty of fiber from a hearty muesli base, while in-season apples add natural sweetness and a boost of vitamin C. They’re a great autumn bake—full of flavour, perfect for lunchboxes, and a fun one to make with the kids.
Ingredients: Makes approx. 20 cookies

115g butter softened

¾ cup brown sugar

1 tsp Vanilla essence

1 egg

½ cup wholemeal flour

½ cup plain flour

½ tsp Cinnamon
-
½ tsp Nutmeg
-
1 ½ cup muesli any variety (nut free if sending to school)

½ Apple grated or finely cubed
Optional:

¼ cup pepitas or other seeds
Method:
- Preheat oven to 180 degrees Celsius and line a baking tray.
- In a large bowl, with an electric mixer, cream butter and brown sugar until light and fluffy then add in egg and vanilla and continue beating until combined.
- Stir into mixture flours, cinnamon, nutmeg, muesli, apple and seeds.
- Using damp hands, roll tablespoons full of batter into slightly flattened balls onto tray. Allow room for spreading
- Bake for 12-15 minutes for until golden brown and allow to cool before eating!
